Though it sounds like a simple word, Kappo actually refers to one of the most sophisticated of Japanese cuisines in which the chefs prepare improvised, elegant meals right in front you. Kappo restaurants are generally very small and usually offer only counter seating. Simple in design and concept though Kappo may be, the dishes that Kappo chefs are at the very pinnacle of refined Japanese cuisine. The word Kappo literally means cutting and heating of ingredients. It is one of the most well known cuisines among Japanese, who in general will leave the entire menu up to the chef. The reward for doing this is a food experience that will be long remembered.

At the Hotel Granvia Kyoto we are pleased to offer guests the chance to enjoy this elegant cuisine at the Kappo Counter in our Japanese Restaurant Ukihashi. True to tradition, the space is small, with seating for only eight. Our highly skilled Kappo chef will show you his masterful techniques while preparing your memorable meal.
Kappo cuisine is often perceived of as being the province of only the rich, famous and connected, and is generally a rare and cherished experience even for Japanese. Our Japanese chef has decided that he would like foreign visitors to experience the pleasure of this truly exquisite, improvised cuisine as well as the exclusive Kappo atmosphere.
To make Kappo even more accessible to our foreign guests, he has proposed that he will prepare three dishes of your liking using the ingredients of the day. He will show you the ingredients, tell you how he might prepare each dish and then let you choose what you want. The first will be an appetizer. For the other two, you will have more choices. Either you can pick the ingredients and the style of preparation that you want, or you can pick one main dish prepared in your preferred style and let the chef create one more dish that is totally up to him. One of the great experiences in Kappo cuisine is just this - the interactive relationship between you and the chef.

Besides the three dishes, you will be served four kinds of Sake chosen by our Sommelier. According to the different brewing methods and the way the rice is polished, Sake is classified into several types such as Ginjoy, Dai-ginjo, Junmai-shu, Genshu, etc..
The Four Sakes that our Sommelier has selected for this dinner are:
1.Kento (Ginjo-shu) from Joyo Brewery
2.Koto Sen-nen (Junmai Ginjo) from the famed Saito Brewery
3.Tamano Hikari (Junmai-daiginjo) from Tamano-Hikari Brewery
4.Rosan-jin (Junmai Genshu) from Higashiyama Brewery

Our Sommelier will briefly explain each Sake so that you will understand why each one has a distinct flavor. Like wine, Sake and food can also be matched.
