Kaiseki Ryori (Kaiseki Cuisine)
Kaiseki Ryori is the name for very elegant traditional multi-course Japanese Cuisine Dinner, with its origin from the Japanese tea ceremony. Starting from simple dishes and making full use of seasonal ingredients, the presentation of the food is always as beautiful as art.
Our Executive Japanese Chef created the gorgeous 8-course menu for this Gourmand’s Dream, to please both your palate and eyes, using the finest seasonal ingredients as well as the very exquisite plates and bowls.
This Gourmand’s Dream Kaiseki course consists of:
Sakizuke Starter: | A small starter dish or appetizer that is generally served in small, attractive dishes. |
Zensai Appetizer: | Hors d'oeuvres, as in Western-style meals. This second course usually reflects the season and comes with 3, 5 or 7 kinds of items on a dish. Each item is carefully created with great attention being paid to color and shape. |
Wan: |
( Broth ) Mostly a Clear Soup. Before you try the soup, be sure to enjoy the design and color of the bowl. Then, remove the lid, savour the bouquet and finally take a small sip. At this point, you should take your chopsticks and enjoy the various items in the soup before sipping the rest of the soup. |
Otsukuri : |
( Sashimi ) Sashimi or fresh raw fish. Normally 2 or 3 kinds of fish -- white, yellow and red is basic. Start with the white, then the yellow and finally the red in order to truly appreciate the taste. This way you will be able to sense the flavor changes from a light fish to the stronger taste of a darker fish at the end. |

*This is a traditional spring Kaiseki dinner. Ingredients may vary according to market availability.
Along with your dinner, you will be served four kinds of Kyoto sake, each pre-poured in generous cups. For some it may be enough, but if one of them catches your fancy, you may order more at an additional cost.
Sake Tasting
The water of Kyoto is so pure that it is perfect for making exceptional sakes. Water, of course, is a key ingredient as is rice. Kyoto Sakes are preferred around the country for their quality and flavors. According to the different brewing methods and the way the rice is polished, Sake is classified into several types such as Ginjoy, Dai-ginjo, Junmai-shu, Genshu or some others.
The Four Sakes that our Sommelier has selected for this dinner are:
1. Kento (Ginjo-shu) from Joyo Brewery:
2. Koto Sen-nen (Junmai Ginjo) from the famed Saito Brewery
3. Tamano Hikari (Junmai-daiginjo) from Tamano-Hikari Brewery
4. Rosan-jin (Junmai Genshu) from Higashiyama Brewery

Our Sommelier will briefly explain each Sake so that you will understand why each one has a distinct flavor. Like wine, Sake and food can also be matched. Enjoy your favorite along with your specially prepared Kaseki dinner.
